Ingredients
1 C butter
¼ C instant coffee granules
1 T vanilla extract
1¼ C sugar
1 egg
2½ C flour
½ tsp. baking soda
½ tsp. salt
1½ C toffee bits
Directions
- Set butter out until it is room temperature.
- Preheat oven to 350°.
- Place instant coffee granules into a small microwave-safe bowl and add the vanilla.
- Stir until most of the granules are dissolved, then microwave for 5 seconds and stir again; set aside to cool.
- Cream butter and sugar together for 3 minutes.
- Add egg and beat well. Add coffee vanilla beating until thoroughly mixed.
- Sift together the flour, baking soda and salt and then add to the creamed mixture.
- Stir in the toffee bits.
- Shape dough into 1 inch balls, placing on parchment-lined baking sheets, about 2 inches apart.
- Bake for 10-12 minutes.
