Banana Bread

Ingredients

  • 2½ C flour

  • 2 tsp. baking soda

  • 1 tsp. salt

  • 4 eggs

  • 1 C oil

  • 2 C brown sugar

  • 1 tsp. vanilla

  • 2 C mashed banana

Directions

  • Preheat oven to 350º.
  • Spray 5 mini loaf pans with non stick spray and line bottoms with parchment paper.
  • Mix baking soda, flour, salt & set aside.
  • In large bowl, beat the eggs, sugar, and oil until fluffy.
  • Add banana and vanilla and mix thoroughly.
  • Fold in dry ingredients just until blended; don’t over mix!
  • Divide evenly into prepared pans.
  • Bake until toothpick comes out clean, 200°-205°, about 30-45 min.
