Ingredients
4 hard-cooked eggs
2-4 T mayonnaise or Miracle Whip
1 tsp. mustard
salt & pepper
paprika or fresh dill or chives for garnish
Directions
- Peel eggs, rinse under cold running water to remove any lingering shell bits.
- With a sharp small knife, slice eggs in half lengthwise.
- Gently remove yolk from egg halves with a teaspoon.
- Press yolks through a sieve with a spoon into a bowl. Add mayo or Miracle whip.
- general rule of thumb is 1-3 tsp. of mayo/Miracle Whip per yolk depending on the size of the yolks used and how eggy versus creamy you prefer your filling.
- Then add mustard and salt and pepper to taste.
- Garnish with a dash of paprika or snipped fresh dill or chives if desired.
