3-2-1 Three Bean Salad

Ingredients

  • 5 lbs kidney beans, rinsed and drained

  • 5 lbs green beans, drained

  • 5 lbs waxed beans, drained

  • 3 C sliced green onions

  • 3-2-1 ratio sugar-vinegar-oil

  • salt & pepper

Directions

  • In a large bowl. combine beans and onions and mix gently.
  • Transfer to large bowl or non-reactive food storage container.
  • Make enough dressing from remaining ingredients to cover the beans by heating vinegar and sugar in non-reactive pan just until sugar is mostly dissolved.
  • Remove from heat and stir in oil, salt and pepper.
  • Refrigerate for 15 minutes to cool.
  • Pour over mixed beans.
  • Refrigerate overnight.
