Chef’s Salad

Ingredients

  • 5 lbs red leaf lettuce

  • 3-5 lbs broccoli

  • 7 long English cucumbers

  • 5 lbs baby spinach

  • 2 lbs mini sweet peppers

  • 1 lb carrots

  • 2 lbs arugula

  • 5 lbs salad mix

  • 6 lbs cherry tomatoes

  • 10 lbs ham

Directions

  • Cut or tear lettuce into bite sized pieces.
  • Cut broccoli into bite sized flowerettes.
  • Slice cucumbers into ¼” slices, then halve.
  • Slice mini sweet peppers into rings, beginning at tip and working towards seed/stem end.
  • Shred or julienne cut the carrots.
  • Wash & spin dry spinach & arugula.
  • Reserving some tomatoes, cucumbers & pepper slices for garnishing, toss all ingredients together except the ham.
  • Cut ham into 1-1½” x ¼” strips & portion into individual serving cups or large serving dish to self serve with the salad & refrigerate
