Ingredients
4 red onions
¼ C red wine vinegar
6 heads Romaine lettuce
12 large cucumbers
10 roma tomatoes
10 C pitted Kalamata olives
2 bunches fresh parsley
3 lbs. feta
Greek Dressing
Directions
- Thinly slice the red onions into strips and toss with the vinegar to marinate; set aside.
- Wash and dry lettuce, cucumbers, and tomatoes.
- Cut lettuce as for salad.
- Cut cucumbers into lengthwise quarters, then cut into ½ inch pieces.
- Cut olives in half.
- Cut tomatoes into 1 inch chunks.
- Rough chop the parsley leaves, discarding the stems.
- Toss together everything except the feta and dressing.
- Add enough dressing to taste. Lastly, crumble the feta and toss in most of it, setting some aside for garnishing.
- Check for seasoning and add more salt and pepper if needed.
