Greek Salad

Ingredients

  • 4 red onions

  • ¼ C red wine vinegar

  • 6 heads Romaine lettuce

  • 12 large cucumbers

  • 10 roma tomatoes

  • 10 C pitted Kalamata olives

  • 2 bunches fresh parsley

  • 3 lbs. feta

  • Greek Dressing

Directions

  • Thinly slice the red onions into strips and toss with the vinegar to marinate; set aside.
  • Wash and dry lettuce, cucumbers, and tomatoes.
  • Cut lettuce as for salad.
  • Cut cucumbers into lengthwise quarters, then cut into ½ inch pieces.
  • Cut olives in half.
  • Cut tomatoes into 1 inch chunks.
  • Rough chop the parsley leaves, discarding the stems.
  • Toss together everything except the feta and dressing.
  • Add enough dressing to taste. Lastly, crumble the feta and toss in most of it, setting some aside for garnishing.
  • Check for seasoning and add more salt and pepper if needed.
