Ingredients
64 oz. sauerkraut
2 C grated carrot
½ C raisinst
1½ C dark brown sugar
2 T cider vinegar
honey, optional
Directions
- Drain sauerkraut and reserve juice.
- Mix drained sauerkraut with carrot and raisins and set aside.
- In a small bowl, whisk together brown sugar (honey may be substituted for some of the sugar if desired), cider vinegar and 1 cup of the reserved sauerkraut juice.
- Pour over slaw and mix well. Serve chilled or room temperature.
