Ingredients
2½ C flour
2 tsp. baking soda
1 tsp. salt
4 eggs
1 C oil
2 C brown sugar
1 tsp. vanilla
2 C mashed banana
Directions
- Preheat oven to 350º.
- Spray 5 mini loaf pans with non stick spray and line bottoms with parchment paper.
- Mix baking soda, flour, salt & set aside.
- In large bowl, beat the eggs, sugar, and oil until fluffy.
- Add banana and vanilla and mix thoroughly.
- Fold in dry ingredients just until blended; don’t over mix!
- Divide evenly into prepared pans.
- Bake until toothpick comes out clean, 200°-205°, about 30-45 min.
