Basic Deviled Egg I

Ingredients

  • 4 hard-cooked eggs

  • 2-4 T mayonnaise or Miracle Whip

  • 1 tsp. mustard

  • salt & pepper

  • paprika or fresh dill or chives for garnish

Directions

  • Peel eggs, rinse under cold running water to remove any lingering shell bits.
  • With a sharp small knife, slice eggs in half lengthwise.
  • Gently remove yolk from egg halves with a teaspoon.
  • Press yolks through a sieve with a spoon into a bowl. Add mayo or Miracle whip.
  • general rule of thumb is 1-3 tsp. of mayo/Miracle Whip per yolk depending on the size of the yolks used and how eggy versus creamy you prefer your filling.
  • Then add mustard and salt and pepper to taste.
  • Garnish with a dash of paprika or snipped fresh dill or chives if desired.
