Ingredients
5 lbs red leaf lettuce
3-5 lbs broccoli
7 long English cucumbers
5 lbs baby spinach
2 lbs mini sweet peppers
1 lb carrots
2 lbs arugula
5 lbs salad mix
6 lbs cherry tomatoes
10 lbs ham
Directions
- Cut or tear lettuce into bite sized pieces.
- Cut broccoli into bite sized flowerettes.
- Slice cucumbers into ¼” slices, then halve.
- Slice mini sweet peppers into rings, beginning at tip and working towards seed/stem end.
- Shred or julienne cut the carrots.
- Wash & spin dry spinach & arugula.
- Reserving some tomatoes, cucumbers & pepper slices for garnishing, toss all ingredients together except the ham.
- Cut ham into 1-1½” x ¼” strips & portion into individual serving cups or large serving dish to self serve with the salad & refrigerate
