Cucumber Crisp

Ingredients

  • 2 quarts thinly sliced cucumbers

  • 2 ginger roots

  • 2 C sugar

  • 2 C vinegar

  • 1 cinnamon stick

  • 1 T whole allspice

  • 1 T whole cloves

  • 1 T peppercorns

  • 1 T celery seeds

Directions

  • Boil all ingredients except for the cucumber slices for 5 minutes.
  • Set aside to cool.
  • Strain brine and pour over cucumber slices.
  • Refrigerate 24 hours before serving.

Notes

  • Keeps 2-3 weeks refrigerated.
