Ingredients
2 quarts thinly sliced cucumbers
2 ginger roots
2 C sugar
2 C vinegar
1 cinnamon stick
1 T whole allspice
1 T whole cloves
1 T peppercorns
1 T celery seeds
Directions
- Boil all ingredients except for the cucumber slices for 5 minutes.
- Set aside to cool.
- Strain brine and pour over cucumber slices.
- Refrigerate 24 hours before serving.
Notes
- Keeps 2-3 weeks refrigerated.
