Sauerkraut Slaw

Ingredients

  • 64 oz. sauerkraut

  • 2 C grated carrot

  • ½ C raisinst

  • 1½ C dark brown sugar

  • 2 T cider vinegar

  • honey, optional

Directions

  • Drain sauerkraut and reserve juice.
  • Mix drained sauerkraut with carrot and raisins and set aside.
  • In a small bowl, whisk together brown sugar (honey may be substituted for some of the sugar if desired), cider vinegar and 1 cup of the reserved sauerkraut juice.
  • Pour over slaw and mix well. Serve chilled or room temperature.
